How to Keep Spices from Clumping

You've seen the problem...you go to use your favorite BBQ rub, but it's one solid mass that you shake and shake, trying to get it into something usable.

Fret not! It's not hard to keep spices from clumping. You just need to control the humidity.

Something a lot of people don't know is that all plastic transmits water vapor. That means a plastic container is allowing moisture into your spice shaker, unless it's glass or metal.

To control this in industry, they know to use mylar bags to keep moisture out, but what do you do at home? Well, you can use glass jars, but that's not very practical, and they can be expensive. Plus, who wants to relabel everything?

The solution? Silica gel.

Silica gel is what's inside those little Tyvek bags that says, "DO NOT EAT". Silica gel sucks moisture right out of the air, locks it away, and voila! humidity controlled.

Naturally, you want to buy some of these things, now. Well, here are some food-grade silica gel desiccant packets on Amazon. Buy spice, throw one or two of these in, problem solved.

For sausage making, phosphates improve flavor, reduce the loss of moisture, increase tenderness and improve firmness.

This ingredient is a combination of three phosphorus derivatives; Sodium Tripolyphosphate (commonly use in processed cheese and cheese powder), Sodium Pyrophosphate (commonly used in baked goods, baking powder also used in processing cheese), and Sodium Hexametaphosphate (emulsifier and stabilizer; commonly use in sauces, egg whites, canned vegetable and fruits). Phosphates are vital to human, animal, and plant life. It is one of the most common substances in our environment, naturally occurring in our food, our water and our bodies.

Aerial View of Beaver Stadium

Aerial View of Beaver Stadium with new scoreboards now available. Beaver Stadium is home to the Penn State Football Nittany Lions, seating more than 100,000 spectators.

Pegula Hockey Photos

Photos of the Pegula Ice Arena are now available at my Pegula Hockey photos store. I had the pleasure of attending a game between Penn State men's hockey and RIT, and the new facilty is simply amazing. Well lit, spacious, and even though I had front row tickets, I took the liberty of walking around during most of the game. Enjoy!

New Nittany Lion Statue at Penn State

There's a new Nittany Lion statue at Penn State. Well, not really a new statue, but the base and the area all around it has completely changed the way it looks.

I'm convinced that they moved the statue, itself. I simply cannot photograph the same angles I used to get. That is, there are trees and other obstructions where they didn't used to be. I'll be looking into this further.
